Crockpot Calico Beans

Here’s a recipe for Calico Beans, a comforting and hearty dish perfect for pairing with cornbread:

Ingredients:

  • 1 lb lean ground beef
  • 1/2 lb bacon, chopped
  • 1/2 onion, chopped
  • 2 cans (15 oz each) pork and beans
  • 2 cans (15 oz each) dark kidney beans, drained and rinsed
  • 2 cans (15 oz each) butter beans, drained and rinsed
  • 1/4 cup ketchup
  • 1/4 cup brown sugar

Instructions:

  1. In a skillet, brown the ground beef and chopped bacon over medium heat until they are cooked through and nicely browned. Drain any excess grease.
  2. Add the chopped onion to the skillet and sauté for a few minutes until the onion is translucent.
  3. In a large slow cooker or crockpot, combine the pork and beans, drained dark kidney beans, and drained butter beans.
  4. Add the browned beef, bacon, and onion mixture to the slow cooker with the beans.
  5. Stir in the ketchup and brown sugar, mixing everything together evenly.
  6. Cover the slow cooker with a lid and cook the mixture on low for 6-8 hours. Alternatively, you can cook it on high for 3-4 hours.
  7. Stir occasionally if possible to ensure even cooking, but it’s not necessary.
  8. Once the beans are tender and the flavors have melded together, the Calico Beans are ready to serve.
